CITRA FACE OFF

Hace tiempo que no hacíamos alguna IPA monovarietal pero ahora sentimos que tenemos las herramientas para elaborar las mejores Single-hop DIPA’s en nuestra vida, así que dijimos… Para que esperar? para conseguir la máxima expresión en estas variedades utilizamos 4 formatos diferentes de cada lúpulo e hicimos un dry-hop en tres etapas diferentes. Los formatos son Spectrum, Cryo, T90 y BBC pellets. Esto ofrece diferentes perfiles que vienen juntos para crear un caracter juicy super armonioso. Spectrum es un nuevo Dry-hop líquido desarrollado por Barth Haas que reduce la contribucion de polifenoles, resultando en una cerveza más redonda para el mismo nivel de intensidad de lúpulo. Agregado en diferentes etapas presenta distintas característica. Lo agregamos durante la fermentación activa para inducir la biotransformación para lograr notas de fruta madura y post-fermentación para las notas clásicas. Post fermentación agregamos dosis duras de crtyo para acentuar, mientras que los t90 y bbc le dan notas suaves a fruta.

Aumentamos el contenido de avena para acentuar un cuerpo cremoso y suave, dandole aun mas fuerza a la experiencia del lúpulo. La versión Citra emana notas de piña, ensalada de frutas tropicales y piel de cítricos

It’s been a while since we brewed up some single hop beers but we felt we had the tools to brew up our best single hop DIPA’s ever so we thought, why wait? To get the fullest expression of these varieties we have used 4 different formats of each hop and dry hopped at 3 distinct stages. The formats are Spectrum, Cryo, T90 and BBC pellets. All offer different profiles which come together to create a harmonious, juicy character. Spectrum is a new liquified dry hop developed by Barth Haas which cuts down on the polyphenol contribution from the hops, therefore resulting in a smoother beer for the same level of hop intensity. Added at different stages it can present different characteristics. We have added it during active fermentation to induce biotransformation to get more overripe fruity notes and then again post fermentation for the more classic notes from these hops. Heavy doses of Cryo pellets post fermentation produces impactful top notes while two distinct types of pellets, T90 and BBC provide the deeper and softer fruit characteristics. We have pushed the oat content to higher levels than we typically do on these beers to really acentuate a soft, creamy body providing a delightfully moreish hoppy experience. The Citra version screams notes of peach ring jellies, pineapple, tropical fruit salad and zesty citrus fruit
